Swiss Cheese Scramble

Ingredients

8 pieces of bacon, fried crisp and crumbled
2 cups of soft breadcrumbs, no crust
1 3/4 cups of milk
8 slightly beaten eggs
3/4 tsp. of salt
1/8 tsp. of pepper
2 tbsp. of butter
1/2 pound of sliced Swiss cheese
2 tbsp. of melted butter
1/2 cup of fine dry bread crumbs

Serves 8

Directions

  1. Combine bread crumbs and the milk in a bowl

  2. After 5 minutes, drain the milk from the bread crumbs

  3. Combine the milk and the beaten eggs and add the salt and pepper

  4. Melt the butter in a skillet and add the egg mixture and scramble until soft, not quite fully cooked

  5. Add the soaked bread crumbs and turn into a buttered baking dish

  6. Arrange the cheese on top

  7. Combine the dry bread crumbs and the butter and sprinkle on top of the cheese

  8. Top with crumbled bacon

  9. Bake at 350 degrees for about 30 minutes
