Corn Cakes

Ingredients

1 cup of white corn meal
1/2 tsp. of salt
1/2 tsp. of baking soda
1 egg
1 1/2 tbsp. of oil

Directions

  1. Place corn meal in large mixing bowl and add enough milk to just moisten the meal and keep it together

  2. Make a well in the center of the corn meal, add salt and baking soda into well

  3. Pour about 1/2 cup of hot water into the well on the salt and baking soda, and watch it volcano

  4. After approximately 15 seconds begin stirring the mixture

  5. Add another 1/2 cup of water and continue stirring

  6. Add the egg and blend it completed

  7. Add oil and continue to blend

  8. Test mixture for thickness

  9. Add water if necessary until batter is thin enough to pour onto hot, greased griddle and form the perfect cake (you want them to be thin, not thick like pancake)

  10. Serve with butter, syrup, tomato goulash or kidney stew
