Peggy B. Carroccio's String Bean Casserole

A recipe from my mother-in-law, Peg Maggs, served at Thanksgiving.

 

Ingredients

10 slices of bacon
2-16 oz. packages of Birds Eye cut green beans
1 lb. of mushrooms, sliced
3/4 cup of chopped onion
3/4 tsp. of pepper
One 16 oz. of Jar Cheez Whiz Pasteurized Process Cheese Spread

Directions

  1. Cook bacon until crisp, then drain and reserve 1/4 cup of drippings. Crumble and reserve 2 tbsp.

  2. Microwave beans as directed on package and drain well

  3. Add mushrooms and onion to reserved 1/4 cup of drippings in a skillet

  4. Cook and stir on medium high heat for 10 minutes, then drain

  5. Add bacon, hot cooked green beans and pepper, and mix lightly

  6. Spoon into serving dish

  7. Microwave cheese spread as directed on label

  8. Pour over green bean mixture and sprinkle with reserved crumbled bacon
