Nana Salvatore's Meatballs and Sauce

Ingredients

2 lbs. of ground chuck
2 eggs, beaten
Salt and pepper to taste
1 cup of Italian style bread crumbs
3/4 cup of parmesan cheese
Fresh parsley, chopped
3 cloves of garlic, chopped fine
1 cup of warm water

Directions

  1. Combine all ingredients and make small balls about 1.5 inches

  2. Using cookies sheets with raised edges, coat cookie sheets with olive oil

  3. Turn meatballs in olive oil on pan to coat

  4. Bake at 400 degrees for 20 minutes (don’t turn meatballs)

  5. Add meatballs to sauce

  6. Add drippings from pan to sauce for added flavor

Sauce:

  1. Sauté onions and garlic in oil

  2. Add, stir, and cook 2 large 28 oz. cans of crushed Italian tomatoes with puree, 2 cans of tomato paste, 2 cloves of garlic cut in half, salt, pepper, basil, and oregano
