Pumpkin Cake

I make this all fall, September to Thanksgiving, for dessert or coffee.

 

Ingredients

1 box of yellow cake mix (remove 1 cup and set aside)
1/2 cup of melted butter
4 eggs
1 large can of pumpkin
2 tsp. of cinnamon
1/2 cup of brown sugar, packed
2/3 cup of milk

topping

1 cup of reserved dry cake mix
1/2 cup of granulated sugar
1/4 cup of butter, softened
Chopped walnuts or pecans

Directions

  1. Preheat oven to 350 degrees

  2. In a large bowl, add cake mix (reserve 1 cup and set aside), 1 egg, and 1/2 cup of melted butter

  3. Mix together and press into bottom of 9x13 pan

  4. Then mix pumpkin, 3 eggs, cinnamon, brown sugar, and milk

  5. Pour over the mixture in the 9x13 pan

  6. For topping, crumble together the 1 cup of cake mix, sugar, and butter, then sprinkle over pumpkin mixture

  7. Add nuts over the top of cake

  8. Bake for 1 hour
