Fiesta Casserole Bake

Ingredients

5 boneless chicken breasts, cooked
Two 10 oz. cans of condensed cream of mushroom soup, undiluted
Chicken soup, undiluted
1-4 oz. can of green chilies
1 large onion, chopping
1 cup of grated cheddar cheese
1 cup of grated Monterey jack cheese
2 tbsp. of ground cumin
8 oz. of sour cream
13 oz. bag of tortilla chips

Directions

  1. Cut cooked chicken into cubes

  2. Mix chicken with all the ingredients, except the tortilla chips

  3. Preheat oven to 350 degrees

  4. Generously grease a 9x13 casserole dish

  5. Crumble the bag of chips

  6. Stir 3/4 of the bag of chips into the chicken mixture

  7. Spread mixture into baking dish and sprinkle remaining chips over the top

  8. Bake for 40 minutes

  9. Garnish with sliced black olives and cheddar cheese
