Crustless Cheesecake

This is very rich and usually a half ice scream scoop size will suffice. Served with blueberries and strawberries, it is very attractive. When I serve this dessert, I put a plate of Milanos on the table. We have several friends who are diabetic but still crave sweets—this makes everyone happy. Walter and I make this once a week—so we always have it in the fridge. I have found that with the berries, it makes an excellent breakfast

 

Ingredients

12 oz. of cream cheese, softened
2 packets of different sugar substitutes or 3 packages of the same kind
1 tsp. of vanilla extract
1 cup of heavy cream (half pint)
Fruits (if desired)

Directions

  1. Combine cream cheese, sugar substitute, and vanilla and mix well

  2. Whip heavy cream and fold into cream cheese mixture

  3. Chill and enjoy
