Jonathan's Tequila-Lime Chicken Fajitas

Ingredients

2 lbs. of boneless, skinless chicken breasts
4 limes
1/2 bunch of cilantro, chopped
2 white onions
4 green peppers
Olive oil
Tequila
Flour tortillas
Avocados

Directions

  1. Trim chicken breasts, wash and pat dry

  2. Slice lengthwise into thin strips

  3. Place in a ziplock bag, add chopped cilantro, squeeze lime juice, olive oil, and enough tequila to coat all the chicken

  4. Close bag and shake

  5. Refrigerate for 15 minutes or up to an hour

  6. Slice onions into half rings

  7. Clean seeds from green peppers and slice into long strips

  8. In a big frying pan, add chicken and marinade, cook until just under done

  9. Remove chicken to bowl

  10. Sweat green peppers and onions until soft

  11. Add chicken back into frying pan and finish off

  12. Serve with steamed tortillas, slices of avocado, hot sauce, cheddar cheese, salsa fresca, jalapeno slices, or whatever your heart desires
