Southwestern White Chili

A Little Flower School favorite.
Ingredients
1 tbsp. of olive oil
1 lb. of boneless, skinless chicken breasts cut into cubes
1/2 cup of chopped onion
2-3 cups of chicken broth
9 oz. can of cannelloni beans, undrained
One 4 oz. can of chopped green chilies
2 tsp. of minced garlic
1 tsp. of cumin
1 tsp. of oregano
1 tbsp. of chopped cilantro leaves
1/2 tsp. of ground red pepper
Monterey jack cheese, grated
Directions
In a 3-qt. saucepan ove medium-high heat, sauté chicken in olive oil for 5 minutes, stirring often
Remove chicken and add in onions to saucepan and cook for 2 minutes
Stir in broth, green chilies, and spices and simmer for 30 minutes
Stir in cooked chicken and beans
Simmer for 10 minutes
Garnish with cheese if desired
