Southwestern White Chili

A Little Flower School favorite.

 

Ingredients

1 tbsp. of olive oil
1 lb. of boneless, skinless chicken breasts cut into cubes
1/2 cup of chopped onion
2-3 cups of chicken broth
9 oz. can of cannelloni beans, undrained
One 4 oz. can of chopped green chilies
2 tsp. of minced garlic
1 tsp. of cumin
1 tsp. of oregano
1 tbsp. of chopped cilantro leaves
1/2 tsp. of ground red pepper
Monterey jack cheese, grated

Directions

  1. In a 3-qt. saucepan ove medium-high heat, sauté chicken in olive oil for 5 minutes, stirring often

  2. Remove chicken and add in onions to saucepan and cook for 2 minutes

  3. Stir in broth, green chilies, and spices and simmer for 30 minutes

  4. Stir in cooked chicken and beans

  5. Simmer for 10 minutes

  6. Garnish with cheese if desired
