Scone Recipe #3

Ingredients

2 1/4 cup of flour
1/4 tsp. of salt
1/2 tsp. of baking soda
1 tsp. of cream of tartar
7 tbsp. of butter
1 tbsp. of heaping honey
1/3 cup of milk
1 cup of raisins or currants

Directions

  1. Preheat oven to 450 degrees

  2. Sift flour, salt, baking soda, cream of tartar in a mixing bowl

  3. Rub in butter with your fingers until mixture resembles fine bread crumbs

  4. Make a well in the center and stir in honey and enough milk to make a light springy dough, firm enough to handle

  5. Turn the dough onto a well floured board

  6. Knead very lightly to remove any cracks and roll out to a thickness of 1/4 inch

  7. Cut into 2 inch rounds with cookie cutter or glass

  8. Place rounds on a greased, floured cookie sheet

  9. Glaze each scone with a little milk

  10. Bake on top rack of over for 7-10 minutes or until risen and brown
