Roll-Out Cookies

These are the “Tea Pot Cookies” — easy, fast, and delicious! I usually double the recipe

 

Ingredients

1 cup of butter, softened
1 cup of sugar
1 large egg
1 tsp. of vanilla extract
2 tsp. of baking powder
3 cups of flour

icing

Powdered sugar
Milk
Food coloring

Directions

  1. Preheat oven to 375 degrees

  2. Cream butter and sugar with electric mixer

  3. Beat in egg and vanilla

  4. Add flour and baking powder 1 cup at a time

  5. DO NOT CHILL DOUGH

  6. Use lots of flour to roll and cut—I usually hold out some of the flour in the recipe to use for rolling. I cut them somewhat thick

  7. Baking time depends on thickness of cookie and your oven—I check after 6-8 minutes for done-ness (they need to be cooked through, but without brown edges

  8. Leave on cookie sheet while cooling to get center cooked through

  9. Mix icing ingredients, then ice or “paint”—for finer painting, when icing dries you can use Wilton colors and small brushes to add detail
