Sour Cream Raisin Bars

Ingredients

2 cups of raisins
1 cup of butter, softened (2 sticks)
1 cup of packed brown sugar
1 3/4 cups all purpose flour
1 tsp. of baking soda
1 3/4 cups of quick cooking oats
1 cup of granulated sugar
2 1/2 tsp. of cornstarch
1 1/2 cups of sour cream
3 egg yolks
1 tsp. vanilla

Directions

  1. Preheat oven to 350 degrees

  2. Place raisins in saucepan and cover with water and simmer for 10 minutes

  3. Drain and set aside to cool

  4. Cream butter and brown sugar together, stir in the oats, flour, and baking soda

  5. Press half of the mixture into a greased 9x13 cake pan

  6. Bake for only 7 minutes, then take out of oven

  7. In another saucepan, combine granulated sugar and cornstarch

  8. Stir in sour cream and egg yolks

  9. Over medium heat, cook and stir until the mixture thickens—be a little patient, it takes 5-10 minutes

  10. When it starts to thicken, it seems to do it really fast, remove from heat and stir in the raisins and vanilla

  11. Pour this over the partially baked oat mixture crust

  12. Crumble the remaining half of the oat mixture on top

  13. Bake for 30 minutes until golden brown, then cool and cut into bars or squares

Makes 48 bars or 16 squares
