Quick Banana Bread

Ingredients

1 3/4 cups of all purpose flour
2 1/4 tsp. of double acting baking powder
1/3 cup of shortening
2/3 cup of sugar
3/4 tsp. of grated lemon rind
1 to 2 beaten eggs
1 cup of ripe banana pulp

Tip! Have all ingredients at about 75 degrees

Directions

  1. Preheat oven to 350 degrees

  2. Sift all purpose flour and resift with baking powder

  3. Separately, blend shortening, sugar, and grated lemon rind until creamy

  4. Beat in eggs and banana pulp

  5. Add the sifted ingredients in about three parts to the sugar mixture

  6. Beat the batter after each addition until smooth

  7. Place the batter in a greased bread pan or muffin tins

  8. Bake the bread for about 1 hour, or 25 minutes for muffins
