Pralines

This recipe cannot be doubled—should be made one batch at a time.

 

Ingredients

2 cups of sugar
1 cup of brown sugar
1 stick of butter
3 cups of pecans
1 cup of milk
2 tbsp. of corn syrup

Directions

  1. In a heavy pot, cook everything except pecans for about 10 minutes, stirring constantly

  2. After it starts boiling, add pecans

  3. Continue to cook and stir until soft ball stage (240 degrees)

  4. Remove from heat, stir well, and quickly spoon onto wax paper or parchment paper

  5. If using wax paper, be sure to buffer with newspaper underneath, as hot wax will transfer onto whatever is beneath

  6. Allow to cool to room temperature, and store in airtight container
