Kelley's "Pigsicles" (BBQ Ribs)

Ingredients

12 racks of baby-back ribs (1 rack per person)
3 qts. of your favorite barbecue sauce
3 qts. of water
Beer

Directions

  1. Thaw ribs if frozen

  2. In a large pot, mix barbecue sauce and water in pot and heat to a boil, then reduce to a simmer

  3. Grill ribs over medium-hot coals for 10-15 minutes per side to brown and crisp (not intended to cook ribs through)

  4. Once browned on both sides, cut racks into 2 or 3 pieces and place ribs into the pot of simmering sauce

  5. Continue simmering, uncovered until all water is cooked off (2-3 hours or longer), liquid is reduced by half, and ribs are very tender and pull of the bones easily

  6. Serve with salads, coleslaw, and hunks of good bread… and a couple of cold beers!
