Barbecue

Submitted by Eileen Brennan

Dorothy credits Mrs. Ben Hoxie (Mr. Hoxie participated in the uncles’ Friday night prayer group in their early days) as the one who shared the ingredient that makes this “sloppy joe” a barbecue.

Ingredients

1 lb. ground beef
1 medium onion, chopped
2 stalks of celery, chopped
1 can of Libby’s corned beef
1 cup of Open Pit barbecue sauce
1/4 cup of water
Little bit of flour
Toasted rolls
Coleslaw, if desired

Directions

  1. Brown beef, onion, and celery

  2. Add can of corned beef

  3. After meat mixture is cooked, add barbecue sauce and water

  4. Sprinkle a little flour to thicken sauce

  5. Cook for about 15 minutes

  6. Put on toasted rolls and add coleslaw if you want

Serves about 8
