Penne a La Vodka

Ingredients

1/4 cup of extra virgin olive oil
4 garlic cloves, minced
1/2 tsp. of red pepper flakes (or less to taste)
28 oz. can of tomato puree
2 tbsp. of vodka
1 cup of heavy cream
1 lb. of penne pasta
parsley flakes

Directions

  1. In unheated skillet, combine oil, garlic, peppers, and a pinch of salt, stirring to coat with oil

  2. Cook over moderate heat until garlic turns golden, not brown (about 2-3 minutes)

  3. Add crushed tomatoes, stir to blend

  4. Simmer uncovered until the sauce begins to thicken (about 15 minutes)

  5. Meanwhile, cook the pasta as directed and drain

  6. Add to skillet and toss

  7. Add vodka and toss, then cream and toss

  8. Cover and reduce heat to low for 1-2 minutes to allow pasta to absorb sauce

  9. Add parsley and toss

  10. Transfer to warm, shallow bowl, and serve immediately
