Linguine with Tomatoes and Basil

Ingredients

4 large ripe tomatoes, cut into 1/2 inch cubes
1 lb. of brie cheese, rind removed, torn into pieces
1 cup of fresh basil leaves, cut into strips
3 garlic cloves, peeled and minced
1 cup of olive oil
Two 1/2 tsp. of salt
1/2 tsp. of black pepper
1 to 1.5 lbs. of linguine

Directions

  1. Combine tomatoes, brie, basil, garlic, olive oil, 1/2 tsp. salt and pepper in a large bowl

  2. Bring water to a boil for pasta, add remaining salt, then add pasta and cook for about 8-10 minutes

  3. Drain pasta and immediately toss with the tomato, basil, and olive oil sauce

  4. Garnish with parmesan cheese if you wish
