Aunt Margie Gaegler's Custard

My mother hated eggs, so “Aunt” Margie used to make custard in single-serving ramekins and deliver them to our house in a basket. She’d put them in the fridge for my father to have after dinner.

 

Ingredients

4 eggs
2 cups of milk
1/3 cup of sugar, or more
Pinch of salt
1 tsp. of vanilla
Nutmeg

Directions

  1. Preheat oven to 325 degrees

  2. Scald milk

  3. Whip 3 eggs yolks and one egg with fork

  4. Add sugar, salt, and vanilla, and continue to whip up

  5. Add scalded milk and mix

  6. Put hot (boiled) water in shallow pan

  7. Put mixture in custard cups, then sprinkle nutmeg on top of custard

  8. Put cups into shallow pan of water—water should go 1/2-2/3 way up cup

  9. Bake for 1 hour, or until custard is set
