Cranberry Nut Bread

This is a recipe from my mother-in-law, Peg Maggs. It is a Christmas time favorite for us to give as a gift. Perfect at breakfast, tea time, anytime. It is especially good toasted with butter—yum!

 

Ingredients

2 cups of flour
1 cup of sugar
1 1/2 tsp. of baking powder
1/2 tsp. of baking soda
1 tsp. of salt
1 orange
2 tbsp. of shortening
1 egg
1 cup of chopped nuts
1 cup of cranberries, halved (or chopped coursely)

Directions

  1. Sift together flour, baking powder, baking soda, and salt, and set aside

  2. Combine juice and grated rind of one orange, plus the shortening. Add enough boiling water to make 3/4 cup

  3. Add well-beaten egg

  4. Blend liquid into dry ingredients. Stir only until dry ingredients are moistened

  5. Add nuts and cranberries

  6. Grease pan, add batter, and push batter up into corners, leaving center slightly hollowed

  7. Let set for 20 minutes before baking

  8. Back for 60-70 minutes at 350 degrees
