Submitted by Joanne Carroccio

Ingredients

2 cups of fresh basil leaves
1/2 cup of olive oil
2 tbsp. of pine nuts
2 cloves of garlic, lightly crushed
1 tsp. of salt
1/2 cup of freshly grated parmesan cheese
2 tbsp. of freshly grated Romano Pecorino cheese
3 tbsp. of butter, softened at room temp

Directions

  1. Put the basil, olive oil, pine nuts, garlic cloves, and salt in the blender and mix at high speed

  2. Stop from time to time and scrape the ingredients down toward the bottom of the blender cup with a rubber spatula

  3. Add cheeses and butter, and blend, or go to next step

  4. When the ingredients are evenly blended, pour into a bowl and beat in the two grated cheeses by hand

  5. When the cheese has been evenly incorporated into the ingredients, beat in the softened butter

  6. Before spooning the pesto over pasta, add to it a tbsp. of hot water from where pasta was boiled
