Barnes Eggnog

This calorie-free decadence is a must every Christmas at Darby households. Mom began this years ago with her dear friend Barbara Barnes’ family eggnog recipe. And soon, we couldn’t have Christmas without it. At Anne-Marie’s and Maria’s, it is a late Christmas Eve fireside treat, then it comes out again for the Darby Christmas gathering on Christmas day. Many friends and neighbors who have tried it bribe us into a little extra portion to take away. Anne-Marie probably gets the first place for repeat batches each Christmas, probably because she has the most neighbors who discovered its addictive decadence. She has neighbors that actually slipped over to their deck where the extra batch stayed chilled, and ladled away their own supply unbeknownst to Anne-Marie until confessions unveiled the next day or two!

 

Ingredients:

6 large eggs
1 1/2 cups of sugar
1 quart of milk
1 quart of cream (or four 8oz. cartons)
1 pint of whipping cream
1/2 pint of whiskey
1/2 pint of rum (recommend Gold Rum)

Tip! We usually double the recipe to generate enough for its popular demand at our family gatherings.

Directions

  1. Separate egg yolks and egg whites

  2. Beat egg yolks in a large bowl

  3. Add 1 cup of sugar to the bowl

  4. Very slowly add spirits (let them drip down side of bowl)

  5. Add milk and cream to bowl

  6. Beat egg whites in a separate bowl and add 1/2 cup of sugar until stiff peaks and blend into yolk mixture

  7. Whip cream stiff in a separate bowl and gradually blend into mixture

  8. Chill in the fridge and serve with nutmeg once cold
