New York Strip Steak Florentine with Sautéed Mushrooms

Ingredients

3 1/2 tbsp. of butter
2 tsp. of olive oil
2 lbs. of mushrooms, sliced
Salt and pepper
2 tbsp. of chopped fresh chives
3 tbsp. of chopped fresh parsley
3 cloves of garlic, sliced paper thin with single-edge razor blade or crushed and chopped
1 shallot, chopped fine
1/4 cup of cognac
1/2 lemon juice
5 NY strip steaks, 8 oz. each

Directions

  1. Heat butter and olive oil in large frying pan over medium to high heat

  2. When hot, add mushrooms and salt and pepper

  3. Cook for 10 minutes, stirring occasionally

  4. Add chives, parsley, garlic, and shallot, stirring them in to blend 7-8 minutes

  5. Then add cognac and lemon juice

  6. Allow to simmer for 5 more minutes, stirring occassionally

  7. Taste and check for seasoning

  8. Broil steaks to your preference and pour sautéed mushrooms over steaks

  9. Serve with asparagus in hollandaise sauce (or sauce on side)
