Peggy's Eggplant Parmesan

This is a dish Peggy Brennan Carroccio made that is now a family favorite at our house.
Ingredients
Homemade tomato sauce or jars of sauce
Eggplant
Mazola oil
Mozzarella cheese
Progresso Italian-Flavored Bread Crumbs
Parmesan cheese
Directions
Preheat oven to 350 degrees
Slice and peel eggplant, then fry in Mazola oil (absorbs a lot)
Drain eggplant on paper
Make one layer of eggplant in a baking dish
Add layer of cheese, then a layer of tomato sauce, and repeat the 3 layers
Top with bread crumbs mixed with parmesan cheese
Bake for 30-45 minutes
