Peggy's Eggplant Parmesan

This is a dish Peggy Brennan Carroccio made that is now a family favorite at our house.

 

Ingredients

Homemade tomato sauce or jars of sauce
Eggplant
Mazola oil
Mozzarella cheese
Progresso Italian-Flavored Bread Crumbs
Parmesan cheese

Directions

  1. Preheat oven to 350 degrees

  2. Slice and peel eggplant, then fry in Mazola oil (absorbs a lot)

  3. Drain eggplant on paper

  4. Make one layer of eggplant in a baking dish

  5. Add layer of cheese, then a layer of tomato sauce, and repeat the 3 layers

  6. Top with bread crumbs mixed with parmesan cheese

  7. Bake for 30-45 minutes
