Chicken Parmesan

This was a favorite luncheon entrée my mother and “Aunt” Margie used to make for special occations

 

Ingredients

4 skinned and boned chicken breast halves
1 large egg, lightly beaten
1/2 cup of Italian-seasoning breadcrumbs
2 tbsp. of butter, melted
1 3/4 cups of spaghetti sauce
1/2 cup or 2 oz. of shredded mozzarella cheese
1 tbsp. of grated parmesan cheese
1/4 cup of chopped fresh parsley

Directions

  1. Place chicken between two sheets of heavy-duty plastic wrap, flatten to 1/4 thickness, using a meat mallet or rolling pin

  2. Dip chicken in egg and dredge in breadcrumbs

  3. Cook chicken in butter in a large skillet over medium-high heat until browned on both sides

  4. Spoon spaghetti sauce over chicken, and bring to a boil

  5. Cover, reduce heat, and simmer for 10 minutes

  6. Sprinkle with cheese and parsley

  7. Cover and simmer additional 5 minutes or until cheese melts
