Tuscan Burgers Bruschetta

Ingredients for tomato toppings

1 medium tomato, chopped
3 tbsp. of freshly grated parmesan cheese
3 tbsp. of finely chopped fresh basil
3 tbsp. of extra virgin olive oil
3 tbsp. of finely chopped fresh parsley
2 cloves garlic, minced


ingredients for burgers

1.5 lbs. of ground beef
3/4 cup of crumbled gorgonzola cheese
2 tbsp. of chopped onion
1 1/2 tbsp. of finely chopped fresh parsley
4 thin slices of prosciutto
1 1/2 cups of shredded fontina cheese
8 slices of Italian bread
Extra virgin olive oil

Directions

  1. Combine tomato toppings ingredients in small bowl, seasoning with salt and pepper, as desired, and set aside

  2. Combine ground beef, gorgonzola cheese, onion, and parsley in a large bowl, seasoning with salt and pepper, as desired, and mixing lightly but thoroughly

  3. Lightly shape into four 3/4 inch thick patties

  4. Place patties on grid over medium, ash-covered coals

  5. Grill, uncovered, 13-15 minutes to medium doneness, until center isn’t pink and juices show no pink color, turning occasionally

  6. During last 2-3 minutes of grilling, top each burger with prosciutto slice and 1/4 fontina cheese

  7. Meanwhile, brush both sides of bread slices with oil

  8. About 2 minutes before burgers are done, place bread on grill

  9. Grill until lightly toasted, turning once

  10. Spoon 1/2 tomato toppings on 4 bread slices, then top with burgers and remaining tomato topping, and close sandwiches
