Gomer's Banana Bread

This recipe, which comes right from the book, is my family’s favorite version of banana bread. Sometimes I will throw in a 1/2 cup of mini semi-sweet chocolate morsels…mmm..mm…good!

 

Ingredients

6 to 7 ripe bananas, mashed
1 cup of oil or butter
2 cups of sugar
4 eggs, well beaten
2 1/2 cups of all purpose flour, sifted
1 tsp. salt
2 tsp. baking soda
1/2 cup of nuts, walnuts or pecans

Directions

  1. Preheat oven to 350 degrees

  2. Grease 2 large or 5 small loaf pans

  3. Mix oil with sugar

  4. Add eggs, beat

  5. Add bananas, stir

  6. Sift dry ingredients, then mix everything together

  7. Put batter in the pans

  8. Bake at 350 degrees for 1 hour or more as needed
